Colourful & Extra Chia Pudding by Celina Liya

Have you ever soon those "YouTube Made Me Buy It?"-videos on YouTube? If you haven't, it's a video where people explain why they bought certain products, simply because a YouTube personality influenced them to do so. I personally, bought way too much because of YouTube. And they've all been a hit or miss.

But let's try to stay on topic here: Chia pudding. Chia pudding is the kind of dish that would be featured in an "Instagram Made Me Cook It"-post. Don't get me wrong, I love chia. But mostly because I've heard about the amazing nutritional benefits and because I like how it adds a good crunch to my green smoothies.
But there was chia pudding... I wasn't entirely sure if I would like this, but I must admit. I kinda do.

If you're expecting smooth pudding like your granny used to make: Let those expectations go.
This pudding does have a bit of a texture to it because the chia's never fully dissolve. They become these sort of little soft jelly beans. So if you're anything jelly/gummy like, you'll like this pudding.

Of course, I needed to be extra and add some colours to my pudding, but you can obviously leave it as is.

Recipe

Ingredients - for 1 glass

For the pudding:
  • ¼ cup chia seeds
  • 1 cup any plant-based milk
  • 1 tsp maple syrup or agave
  • The tiniest pinch of salt
For the colours:
  • Red beet powder
  • Blue matcha powder

Instructions

Combine your chia seeds, salt, milk and liquid sweetener in a bowl and mix (with a spoon). Cover the bowl and pop in the fridge for 6 hours or preferably overnight.
Remove your bowl from the fridge and, if you desire to add colours, prepare 3 more bowls. Add 2-3 tbsp of chia pudding to each bowl and add your colouring to each bowl. Make sure to start off with a little bit of colouring, mix, and add more if you desire a darker colour.
After everything is mixed, simply arrange your pudding in your glass according to your aesthetic wishes. :)
